FIXPAN
Fixpan is an electronically controlled, indirectly heated stationary kettle: it pasteurises, cooks and boils, with multi-stage recipes and consistent results.
Fixpan combines thermal precision, automation and ease of use. The FTC controller holds the process temperature precisely, and the water recirculation system spreads the heat evenly through the whole vessel – so every jar in a batch receives the same heat treatment.
It is available with gas, electric or steam heating, from 100 to 500 litres, with an optional hermetic lid. Once a saved programme is started, the system guides the operator step by step, so no specialised staff are needed and one person can supervise several machines.
Besides pasteurising, Fixpan can be used for cooking, boiling, low-temperature and sous-vide cooking, and cooking in jars.
Equipment
- Hermetic lid (optional): Prevents water evaporation during heating, shortens heating and boiling times and saves energy.
- Water recirculation: Uniform water temperature through the whole vessel: consistent, repeatable results and shorter cycles.
- Probe system: Product probe on the vessel surface, jacket probe and optional core probe in contact with the product.
- Jacket pressure gauge: Shows the pressure inside the vessel jacket.
- Butterfly drain valve: Stainless steel, for liquid and semi-liquid products or connection to dosing systems; optional swivel drain with solenoid valve.
- Flow meter: Hot and cold water inlet with accurate dosing.
- Accessories: Optional 220 V socket (e.g. for an immersion blender), HACCP data export via USB.
